Enrica runs two weekly courses on Fridays and Saturdays. The cooking course begins at the market (Portobello Market on Fridays and Borough Market on Saturdays) where the menu is improvised according to what’s available. Walking through the market, Enrica teaches you how to choose the best vegetables, fish and meat. Being able to select the right ingredients is one of the secrets that will allow you to cook superb dishes.

We talk about the advantages of unpasteurised cheeses, baguettes baked by the hour, the world’s best ham, the importance of properly ageing meats and best cooking techniques for the various ingredients. The aim, via wheeled wicker basket shopping trips to either Borough or Portobello: to replace marketing for market, in the process slicing straight to the most interesting tastiest ingredients purveyed by distinct, responsive, likeable personalities These include the overlooked and undiscovered.
 
After shopping, you will go back to Enrica’s house and in her kitchen and here you will learn the secrets and the art of Italian cooking. You go through a range of recipes and share the cooking while Enrica talks about the techniques and history behind the various
dishes.
 
You and she will cook a selection of dishes including meat, fish and seafood, pastas and risottos. While the core of Enrica’s food is Venetian, acknowledging her roots, she is not shy about covering Italy from North to South in search of the right, delicious dishes to pass on to her students. On Friday courses the Wine Chap Tom Harrow, pair off courses with a selection of wine from Veneto and neighbouring regions. At the end of either course, you will have enjoyed a truly Italian experience.
